Abstract:
The process and equipment for sterilizing and removing oxygen from liquid foods at low temperature through decompression and/or great linear or rotatory accelarations, object of this Patent, advances the State of the Art for introducing two innovative physical principles for sterilizing liquid foods, at cold: - The first is consisted of subjecting them to great and sudden decompressions, and the second is consisted of imposing great linear, rotatory accelerations, or both combined, over them. The two principles can be applied at any order of occurrence or simultaneously. In consequence of the pieces of equipment used for carrying out the object of this Patent, it also comprises the performance of sterilization and removal of gaseous Oxygen dissolved in these liquid foods and liquid extracts from any vegetable part, preserving their natural colors, tastes, odors, enzymes, vitamins, antioxidants and other nutrients. The pieces of equipment used for carrying out the object of this Patent can use microwave irradiation, ultrasound and heterogeneous photocatalysis, through white light/ultraviolet light irradiation, over its surfaces covered by resins and/or photocatalytic ceramics containing nanostructured particles as auxiliary resources and they can be applied alone or combined in any way. Such sudden and great decompressions can reduce the pressures so that they reach around 20,000 times lower than the initial pressures, existing before the decompression - and they cause a great and sudden expansion of the gases, whether natural or insufflated, present in the cytoplasmic liquids and in the liquids inside the organelles of the contaminative organisms and by explosion of these structures, causing death of all of them, being that such process can be carried out at temperatures close to the freezing points of the liquids to be treated. The great linear, rotatory accelerations, or both combined, may reach up to 1,000 times the gravitational acceleration on the Earth's surface, and they are done by means of frontal, tangential or oblique shocks with the pieces of the equipment, which have lethal effects on the cell membranes, on the organelles and their membranes and, especially, on the cytoskeleton. Such accelerations can also be acquired by subjecting batches of the liquids being treated to very violent turbulences.
