Abstract:
PURPOSE:To obtain alcoholic beverages and food having abundant flavor and improved in utilization ratio of raw material by absorbing water into a raw material for alcoholic beverages and food and then subjecting water-absorbed raw material to parching treatment and saccharifying and fermentation. CONSTITUTION:In the production of alcoholic beverages and food having saccharification and/or fermentation process, a process for absorbing water into at least part of raw material and then subjecting water-absorbed raw material to parching treatment is provided. Production process of refined sake consists of raw material treatment, charging, upper tank and purifica tion process. MIRIN (sweet sake) consists of raw material treatment, charge, saccharification, aging, upper tank and purification process. SHOCHU (low-class distilled spirits) consists of a raw material treatment, charge, saccharification, fermentation and distillation process. Vinegar consists of raw material treatment, charge, saccharification, fermentation, aging and purification process. AMASAKE (sweet drink made from fermented rice) consists of raw material treatment, charge and saccharification process. In the parching process in which the above-mentioned water-absorbed rice is used, property affected by enzyme as a raw material and removal of fat are improved and further flavor is enhanced, compared with a conventional polished rice and treatment of the raw material having excellent parching effect is made possible, because specific heat of water absorbed rice itself is larger than that of polished rice and parching effect is improved.
