Abstract:
PROBLEM TO BE SOLVED: To provide a sweetener composition having a flavor similar to brown sugar or chocolate, and to provide a method for producing the same.SOLUTION: A sweetener composition having a flavor similar to brown sugar can be obtained by heating a raw material liquid obtained by blending 100 pta.mass of liquid sugar having a Brix value of 60-85 and 0.3-70 pts.mass of arginine. A sweeter composition having a flavor similar to chocolate can be obtained by heating a raw material liquid obtained by blending 100 pts.mass of liquid sugar having a Brix value of 60-85, 0.3-40 or more pts.mass of arginine, and valine and glycine with a mass 1-5 times as the mass of the arginine so that the total of the arginine, the valine and glycine becomes 70 pts.mass or less.SELECTED DRAWING: None
