Abstract:
PROBLEM TO BE SOLVED: To provide a method for forming a chlorogenic acid-containing consumption article in which undesirable off-taste is modified and taste and taste recognition are improved, and a method for forming a chlorogenic acid extract.SOLUTION: Provided is a consumption article containing chlorogenic acid given as an additive with a sufficient concentration for covering or modifying a component(s) giving or causing off-taste, and the off-taste, comprising a component(s) selected from artificial sweetener, alcohol, soy beans, carbon dioxide and their combination. The chlorogenic acid is derived from a coffee bean extract, preferably, from a green coffee bean extract, and, more preferably, from a green robusta coffee extract. Also provided is a method for forming a chlorogenic acid extract comprising a step(s) where chlorogenic acid is extracted at 30 to 80°C from a vegetable feed source in a solvent comprising chlorogenic acid in 0.0001 to 0.1%, more preferably, in a concentration of 0.001 to 0.01%, and composed of water and/or a polar organic solvent for one or more times.SELECTED DRAWING: None
