Abstract:
To provide a vacuum cooling device capable of suppressing overshoot in transferring from a cooling process to a holding process by cooling food to a cooling target temperature without temperature unevenness and supercooling.SOLUTION: A cooling process S1 and a holding process S2 are successively executed. In the cooling process S1, a decompressing operation S11 for reducing a pressure in a processing tank to a set pressure when the set pressure is a saturation pressure at a temperature of which a set value is lower than a food cooling target temperature TZ; and a standby operation S12 for keeping the set pressure for a set standby time. In a case when a product temperature is not decreased to the cooling target temperature TZ, the set value is increased and the decompressing operation S11 and the standby operation S12 are repeated. In the holding process S2, the set pressure in the initial standby operation S12 in the cooling process S1 is regarded as a holding pressure PA, and the processing tank is kept under the holding pressure PA until a set holding time has passed. In transferring from the cooling process S1 to the holding process S2, a pressure recovery width is divided into a plurality of pressure regions, and the pressure in the processing tank is recovered in a stepwise manner in each pressure region.SELECTED DRAWING: Figure 2
