Abstract:
An acyl-CoA:ethanol O-acyltransferase/esterase gene and use thereof, in particular, a brewing yeast by which alcoholic drinks having excellent flavor can be produced, alcoholic drinks produced by using the yeast, a method of producing these alcoholic drinks and so on. More specifically speaking, a yeast in which the ester synthesis ability participating the flavor of a product is regulated by regulating the expression amount of a gene EEB1 encoding Eeb1p that is acyl-CoA:ethanol O-acyltransferase/esterase in a brewing yeast ( in particular, nonScEEB1 gene characteristic to beer yeast), a method of producing alcoholic drinks by using this yeast and so on.
