Abstract:
The present invention provides: an acid type sophorolipid-containing composition which is suppressed in browning; and a method for producing this acid type sophorolipid-containing composition. An acid type sophorolipid-containing composition according to the present invention, which is suppressed in browning, is characterized in that the filtrate of a lactone type and acid type sophorolipid-containing composition after a hydrolysis treatment has at least one of the characteristics (1) and (2) described below. (1) The hue value (Abs. 440) is 5 or less.
(2) The ethanol-insoluble fraction is less than 3% by mass.
