Abstract:
Disclosed is an acidic soluble soybean protein material with reduced astringency and excellent taste and for use in acidic food and drinks. At the time of acidic solubilization treatment which increases astringency, by using as a raw ingredient a soy protein material with increased 7S globulin content and a 0.4 or higher ratio of 7S globulin/(11S globulin + 7S globulin) in the total proteins, an excellent tasting acidic soluble soybean protein material is obtained in which the originally present astringency has been greatly decreased by means of the acidic solubilization treatment.
