Abstract:
Provided is an anti-inflammatory agent obtained from a material which can be widely used as a food ingredient. An anti-inflammatory agent exhibiting strong effects was obtained by using, as the active ingredient, the hydrolysis product of a protein composition in which soybean-derived β-conglycinin, which is a food ingredient, is the main component. The di·tripeptide content in the hydrolysis product is preferably 40 wt% or more. The anti-inflammatory agent can be widely used as a pharmaceutical agent or by being added to food or drinks.
