Abstract:

The present invention relates to a fermented mealworm extract and to an antioxidant composition containing same, wherein mealworm larvae are extracted using an organic solvent so as to remove oil and fat components contained in the mealworm larvae, then freeze dried, fermented using yeast strains, and then extracted using water or an organic solvent so as to obtain an extract. The fermented mealworm extract of the present invention has the advantageous effect that the total polyphenol, flavenoid, tannin and essential amino acid content is increased and changed, and yeast protein used by mealworm larvae is generated, while antioxidant activity is increased. Consequently, a composition containing the fermented mealworm extract of the present invention can be used as an antioxidant composition.
