Abstract:
Provided are: an aqueous colorant material solution that has excellent thermal stability under acidic conditions; a production method for the aqueous colorant material solution; and a blue-colored beverage. This acidic aqueous colorant material solution is characterized by containing phycocyanin (A), a polycarboxylic acid (B) having one or more hydroxyl groups, and at least one nonionic emulsifier (C) having an HLB of 15 or more and selected from the group consisting of sucrose esters and polyglycerin esters. This production method for the acidic aqueous colorant material solution is characterized by comprising a step for dissolution in water (D). In this production method for the aqueous colorant material solution and this blue-colored beverage, these raw materials are dissolved in water.
