Abstract:
Disclosed are an arabinose walnut cake and a preparation method therefor. The walnut cake is prepared by mixing the following raw materials in parts by mass: 55-59 parts of lard, 90-100 parts of coarse white sugar, 11-16 parts of whole egg liquid, 81-90 parts of soybean oil, 10-30 parts of ammonia bicarbonate powder, 0-6 parts of baking soda, 236-245 parts of low-gluten wheat flour, and 0-6 parts of L-arabinose. The preparation method therefor comprises the steps of: fully mixing lard and sugar powder, adding whole egg liquid, and rapidly stirring to whip same, and adding water first, then adding baking soda and salt and stirring uniformly, and then adding soybean oil, finally pouring the low-gluten wheat flour and L-arabinose and stirring slowly, taking out the mixture, generating a cake by a pancake machine, placing the weighed cake on a baking tray, and pressing same into shape by hand, splitting the walnut in half onto each cake, and baking same until the color being light yellow. The product uses lard to combine with soybean oil, being capable of overcoming the defect of high heat of lard.
