Abstract:
The invention relates to an aromatic amino acid transporter gene and use thereof, and particularly relates to a brewing yeast strain whose ability to assimilate an aromatic amino acid is controlled, an alcoholic beverage produced by using the yeast strain and a process for producing the same. More specifically, the invention relates to a yeast strain whose ability to assimilate an aromatic amino acid is controlled by controlling the expression level of TAT1 gene encoding Tat1p which is an aromatic amino acid transporter in a brewing yeast strain, particularly nonScTAT1 gene which is unique to beer yeast, a process for producing an alcoholic beverage by using the yeast strain, etc.
