Abstract:
It is intended to provide an automatic bread machine whereby the fining of the bread product can be improved, and a process for producing bread using this automatic bread machine. An automatic bread machine wherein, in the case of using wheat flour as the main bread material, kneading, primary fermentation, degassing, dough-setting, dough-rounding, molding and fermentation, baking and keep-warming (not shown in figure) are continuously carried out in this order, as shown in FIG. 11(A). In the case of using rice flour as a substitute for wheat flour employed as the main bread material, kneading, dough-setting, dough-rounding, molding and fermentation, baking and keep-warming (not shown in figure) are continuously carried out in this order, as shown in FIG. 11(B). In each case, stirring blades are intermittently driven in the final stage of the kneading and thus the obtained bread dough is tapped against the inner wall of a cooking container.
