Abstract:

Provided is an automatic bread maker having: a receptacle (23) for accommodating ingredients for making bread; a heating unit (26) for heating the receptacle (23); and a temperature detection unit (27) for detecting the temperature of the receptacle (23). The automatic bread maker further has a milling/stirring unit (24) and a control unit (29). The milling/stirring unit (24) is disposed in the bottom part (37) of the receptacle (23), and rotates to perform grinding and stirring of the ingredients for making bread inside the receptacle (23). The control unit (29) is configured to control the heating unit (26) and the milling/stirring unit (24) according to the temperature of the receptacle (23). The control unit (29) is further configured to manage a milling step for preparing a rice paste from ingredients for making bread, and a stirring step for stirring the rice paste following the milling step, such that in the milling step, the milling/stirring unit (24) is rotated in the same rotation speed zone as in the stirring step. According to the present embodiment of the invention, the occurrence of friction heat during milling of the rice kernels is suppressed. As a result, gelatinization of the rice starch is minimized, thus stabilizing the viscosity of the rice paste.
