Abstract:
A problem encountered in the existing non-alcoholic beer taste drinks is that the flavors considerably vary merely by selecting and combining a sweetener, a souring agent and a bittering agent. The problem can be solved by a non-alcoholic beer taste drink which is obtained by adding sodium gluconate to a drink containing a sweetener, a souring agent and a bittering agent, and shows regulated variations in sweetness, sourness and bitterness. The souring agent is one or more members selected from among citric acid, malic acid, acetic acid, tartaric acid, gluconodeltalactone, phosphoric acid, succinic acid, ascorbic acid, phytic acid, lactic acid or salts thereof. The bittering agent is one or more members selected from among a bitter substance originating in hop, caffeine, a gentian extract, peptides, theobromine, aloin, naringin, an Artemisia absinthium extract, β-glucooligosaccharides and a cinchona extract. The sweetener is a fruit juice, saccharides or a high-sweetness sweetener.
