Abstract:
Provided is a beverage containing an amino acid and a carbohydrate, wherein the pH value of the beverage is 3.5 or higher and lower than 4 and the total content of citric acid and a citric acid salt is 0.9 wt% or less in terms of free citric acid. Alternatively, provided is a beverage containing an amino acid and a carbohydrate, wherein the pH value of the beverage is 4 or higher and the total content of citric acid and a citric acid salt is 1.74 wt% or less in terms of free citric acid. Thus, coloration due browning can be prevented in beverages containing an amino acid and a carbohydrate so that beverages having improved storage properties and excellent qualities are provided.
