Abstract:
The present invention relates to a bioconversion process for producing a heavy chain fatty acid and a heavy chain omega-hydroxy fatty acid from a long-chain unsaturated fatty acid substrate by using a novel oleic acid hydratase 2; a novel oleic acid hydratase 2 used for the process; a polynucleotide for coding the oleic acid hydratase 2; and a method for increasing the proportion of water-soluble expression to the total expression level of a target protein. When using the oleic acid hydratase 2 and the method for increasing the expression proportion of a water-soluble protein provided by the present invention, it is possible to increase the efficiency of a conventional bioconversion process for producing a heavy chain fatty acid and a heavy chain omega-hydroxy fatty acid from an unsaturated long chain fatty acid, and therefore the present invention can be widely used for the development of a more effective bioconversion process.
