Abstract:
There is a demand for controlling a carcass weight, which inevitably decreases in the process of processing a bird carcass such as chicken meat, to maintain a state that is close to a pre-processing carcass weight, and achieving a normal state in a transaction in the original commercial process. The present invention provides a bird carcass weight controlling method characterized in that a bird carcass is placed and held, at 5ºC or lower, in an aqueous solution in which the pH thereof is made greater than 9 and equal to or less than 10 by adding an alkaline substance to a 1-to-200-ppm peracetic-acid solution at equilibrium and that comprises glacial acetic acid and hydrogen peroxide, and whereby, the weight of the carcass is controlled.
