Abstract:
The problem addressed by the present invention is to provide: a cake having a moist sensation, a soft melting in the mouth, a favorable fragrance, and a low occurrence of shape loss after baking; and a method for producing the cake. In the cake, 10-40 mass% of oil/fat content is included in the dough for the cake, and at least 50 mass% of the oil/fat content is a triacylglycerol having a medium-chain fatty acid having 6-10 carbon atoms as a constituent fatty acid.
