Abstract:
Provided are a Candida blankii strain and an application thereof, and a method for processing Pu'er tea. The Candida blankii strain has a collection number of CGMCC No. 8682. The strain can be used to process Pu'er tea. The method for processing the Pu'er tea comprises: inoculating a large-leaf and dried Qingmao tea with a separated and purified Candida blankii, followed by fermentation and culturing.
