Abstract:
Provided is a new natural cheese imparted with a new texture while still maintaining the flavor of natural cheese, without using specially designed equipment or additives. A new natural cheese that is brittle, melts in the mouth, has a light texture and is suitable for people who have trouble swallowing is obtained by forcibly mixing in air, until the cheese turns white, by mechanically crumbling into pieces and kneading at least one type of hard or semi-hard natural cheese.
