Abstract:
Provided is a method for manufacturing a chlorogenic-acid-containing composition including: a chlorogenic acid extraction step for bringing a carbohydrate and chlorogenic acid derived from oil extraction residue of sunflower seeds, yeast, and a solvent selected from the group comprising water, alcohol, and a mixture of water and alcohol into contact with each other, and obtaining an extracted liquid containing chlorogenic acid from the oil extraction residue of sunflower seeds; and a bacteria treatment step for performing at least one treatment selected from a sterilization treatment and a bacteria removal treatment on the extracted liquid. Also provided are a chlorogenic-acid-containing composition obtained using this manufacturing method, and a food or drink item containing the chlorogenic-acid-containing composition.
