Abstract:
[Problem] To provide chocolates with which low-temperature bloom can be controlled. [Solution] The chocolates of the invention contain oils and fats, and these oils and fats comprise 50 to 85 mass% of triglycerides wherein an oleic acid is bonded to position 2 and saturated fatty acids having 16 or more carbon atoms are bonded to positions 1 and 3 (XOX-type triglycerides), and 5 to 18 mass% of triglycerides (XO2-type triglycerides) wherein the oleic acid forms a double bond and the saturated fatty acid having 16 or more carbons forms a single bond. It is possible to control low-temperature bloom with such a chocolate.
