A circulating pre-heating coffee machine, comprising a main body, a brewing cavity (6), a water supply device, a heating device (18), a water inlet tube (15), and a water outlet tube (10) separately installed on the main body, and a control device, a drive device, a flow diversion structure installed on the main body. The water supply device is in communication with the heating device (18) via the water inlet tube (15), and configured to be able to supply water to the heating device (18) via the water inlet tube (15). The water supply is in communication with the heating device (18) and the flow diversion structure. The flow diversion structure comprises a first branch path (110) and a second branch path (120) provided with a water outlet switch. The water outlet tube (10) is in communication with the water supply device via the first branch path (110), such that the water supply device, the water inlet tube (15), the heating device (18), the water outlet tube (10), and the first branch path (110) are sequentially communicated and form a circulation pipeline. The circulation pipeline is provided with a check valve device (231) or a pump (234). The control device and the drive device are electrically connected. The coffee machine realizes a pre-heating function. Further provided is an operation method for the circulation pre-heating coffee machine.
