Abstract:
Disclosed is an citrus piece processing method directly utilizing acid-alkali water. The citrus piece processing method uses an organic acid or polybasic inorganic acid instead of a monobasic inorganic acid, and comprises: processing peeled and split citrus pieces in an organic acid solution or a polybasic inorganic acid solution; then removing segment membranes by means of treating same in an alkaline solution; directly collecting the treated acid water and the alkali water; and then, carrying out filtering and mixing so as to prepare a functional electrolyte beverage and various beverage bases containing a plurality of functional components, such as pectin, flavone, a pigment, and limonin. The treated acid water and the alkali water can also be prepared into dietary fiber with the effect of improving intestinal functions. Conventional canned citrus production technology is improved by directly processing produced acid water and alkali water with high COD content into beverages or other series of products; and no high-acid-content or high-alkali-content wastewater is produced, which reduces wastewater processing costs in a cannery and increases added values of citrus processing, thereby improving the economic benefits of an enterprise; moreover, the citrus piece processing method is simple in terms of flow, the processes thereof are economical and safe, free from emissions or pollution, and suitable for mechanized and large-scale production.
