Abstract:
[Problem] To manufacture a cloudiness-inhibiting agent having the effect of inhibiting cloudiness in a tea drink, the agent being very safe, having no flavor, and using a low-cost method that has little impact on the environment; and to effectively utilize yeast cell residue generated as a by-product of a yeast extract. [Solution] Yeast cell residue is suspended in water after useful extracts are removed from the yeast. The suspension is heated and then centrifugally separated to obtain a supernatant. This fraction includes 50% or more of RNA content in relation to the solid content, 5% by weight or more of dietary fiber content, and 10% by weight or more of protein content, the mannan content of the dietary fiber being 60% by weight or more, and the fraction can be used to inhibit cloudiness in a tea beverage.
