Abstract:
A coagulating agent for filled tofu (filled soybean curd), which comprises a water-in-oil-type emulsion composition in which aqueous phases each containing magnesium chloride are emulsion-dispersed in an oily phase, wherein polyglycerin condensed ricinolate and a phospholipid are contained as emulsifying agents in the coagulating agent for filled tofu, and the contents of magnesium chloride and the phospholipid in the coagulating agent for filled tofu are 14.0 to 26.0% by mass and 0.1 to 1.6% by mass, respectively.
