Abstract:
Disclosed is a particulate composition that is a solid at room temperature, which has excellent oxidative stability, which encapsulates a large quantity of a substance such as a hydrophilic substance, which, when coating the substance contained causes only minimal heat-induced damage to the substance contained, and which is capable of rapidly releasing the coated substance when the composition reaches the intestine. Also disclosed is a fat composition that can be used in said particulate composition. The particulate composition has a solid fat content of at least 58% at 25°C, a large quantity of hydrophilic substances dispersed in a matrix of a fat composition having a solid fat content not exceeding 90% at 37°C. The coating fat composition contains, as constituent fatty acids, at least 45 wt% triglycerides having at least saturated fatty acids having 6 to 12 carbon atoms and saturated fatty acids having 14 or more carbon atoms, and more than 50 wt% saturated fatty acids having 14 or more carbon atoms with respect to all of the fatty acids that make up the fat.
