Abstract:
Provided is a coffee whitener that is provided with excellent storage stability and dispersibility to coffee without the use of synthetic emulsifiers. The coffee whitener is prepared by using, as the aqueous phase thereof, a casein-containing milk protein solution that has been deamidated with a protein deamidase.
