Abstract:
A collagen composition in which the content of collagens each having a molecular weight of 90,000 or higher is 70% or higher on a solid basis with respect to the mass of the proteins, and which has a solubility in water (25°C) of 10% or higher and, in an examination by electrophoresis under non-reducing non-heating conditions, shows bands indicating an α chain, a β chain, and a γ chain. The collagen composition can be produced by: either treating a fish skin with a strong-acid dilution and then with a strong-alkali dilution or treating a fish skin with a strong-alkali dilution and then with a strong-acid dilution; extracting collagens from the resultant fish skin with a dilute weak-acid solution; and purifying the extracted collagens by ultrafiltration or equilibrium dialysis.
