Abstract:

A process for the preparation of water-insoluble useful substances originating in fishes and shellfishes, which comprises effecting solid-liquid separation of an oil-in-water (O/W) emulsion composition obtained by treating offal of fishes and shellfishes containing useful substances with a protease under stirring and comprising water-soluble amino acids, oligoproteins of 30,000 or below in molecular weight, water-soluble minerals, fats containing water-insoluble, highly unsaturated fatty acids and proteins (solid matter) of 20,000 to 100,000 in molecular weight, with proteins of 20,000 to 100,000 in molecular weight accounting for at least 50 % of the whole protein component, and extracting the obtained solid composition containing the proteins of 20,000 to 100,000 in molecular weight and the fats with an organic solvent.
