Abstract:
The present invention is a novel composition wherein fibrous protein antigenic properties have been covered. The composition comprises a complex wherein a fibrous protein such as, for instance, tropomyosin derived from a shrimp, and a maltooligosaccharide such as, for instance, maltopentaose or maltoheptaose, have been conjugated by a Maillard reaction.
