Abstract:
The present invention relates to a composition for detecting biogenic amine-producing microorganisms, and more particularly, the composition for detecting biogenic amine-producing microorganisms relates to a culture medium composition for detecting biogenic amine-producing microorganisms. Also, the present invention relates to a culture medium produced by using the composition for detecting biogenic amine-producing microorganisms, and to a kit including the culture medium for detecting biogenic amine-producing microorganisms. When the composition of the present invention for detecting biogenic amine-producing microorganisms is used, the production of biogenic amine of target strains can be qualitatively and quantitatively determined in a simple manner. In particular, for strains such as the Bacillus sp. strain, which is widely used to make fermented foods in Asian countries including Korea, it is difficult to confirm biogenic amine production through conventional methods applied to lactobacillus, whereas the composition of the present invention can easily detect biogenic amine production qualitatively and quantitatively for such strains by producing alkaline components during the growing or culturing of the strains. The present invention, when compared to conventional technologies that use precision equipment such as the existing HPLC, is advantageous in being able to economically and quickly detect biogenic amine-producing strains, and can be widely used in assorted industries related to fermented foods and various other foods.
