Abstract:
Provided is an oil/fat composition wherein eicosapentaenoic acid in an oil/fat is readily hydrolyzed by a pancreatic lipase, and saturated fatty acids in the oil/fat are not readily hydrolyzed by the same. An oil/fat composition wherein the diacylglycerol content in an oil/fat is 60-100 mass%, the eicosapentaenoic acid content in the fatty acids making up the diacylglycerol is 15-99 mass%, and the diacylglycerol content (X) and the eicosapentaenoic acid content (Y) satisfy the relationship of the following expression (1): X×0.6+Y>60 (in this expression, X indicates the diacylglycerol content (mass%) in the oil/fat, and Y indicates the eicosapentaenoic acid content (mass%) in the fatty acids making up the diacylglycerol).
