Abstract:
Disclosed is a concentrated coffee extract which has a rich sweet aroma and a crispy aftertaste.
Specifically disclosed is a concentrated coffee extract comprising the following components (A) and (B), wherein the ratio by mass of the content of the component (B) to the content of the component (A) [(B)/(A)] is not greater than 0.6:
(A) at least one kind of pyrazine compound selected from among 2-methylpyrazine, 2,5-dimethylpyrazine, 2,6-dimethylpyrazine, ethylpyrazine, 2-ethyl-5-methylpyrazine, 2-ethyl-6-methylpyrazine, 2-ethyl-3-methylpyrazine, 2-ethyl-3,5-dimethylpyrazine and 3,5-dimethyl-2-methylpyrazine; and
(B) at least one kind of guaiacol or derivative thereof selected form among guaiacol, 4-ethylguaiacol and 4-vinylguaiacol.
