Abstract:
Provided is a confectionary having a grape-like mouthfeel, i.e., a confectionery that contains a solidified gel composition and a collagen casing coating the solidified gel composition and that, through the solidified gel composition having the dynamic viscoelastic pattern of raw grape flesh, has a bursting mouthfeel like that of a raw skin-attached grape. This dynamic viscoelastic pattern is, for example, a dynamic viscoelastic pattern in which the loss tangent value at an angular frequency of 63.1 rad/S is reduced by 34% to 83% with respect to the loss tangent value at an angular frequency of 3.98 rad/S.
