Abstract:
[Problem] To provide a deboning device for chicken bonjiri (a piece of meat taken from around the tailbone) by which the tailbone in bonjiri can be safely and efficiently removed so that labor required for deboning bonjiri can be reduced.
[Solution] A deboning device for chicken bonjiri comprises: a rotary conveyor mechanism 3 which selectively rotates a plurality of trays (dice cups) 2, said trays 2 being arranged in the radial direction centering around the support shaft of a disk 3a, intermittently in the horizontal direction at a definite speed; a holder 4 of a punch mechanism which punches out the tailbone 1a in bonjiri 1 from the bonjiri 1 placed on the tray 2, when the rotary conveyor mechanism 3 is in the stopped state; and an arm 5 of a treated meat-discharge mechanism which reverses the tray 2 to thereby convey out the deboned bonjiri 1 from the device.
