A desalination system (2) equipped with a water tank (102), a water-repellent particle layer (104) arranged beneath the water tank and composed of water-repellent particles, and a liquefaction layer (105) arranged beneath the water-repellent particle layer, wherein a liquid (4a) is introduced into the water tank, the introduced liquid is heated to vaporize the liquid into water vapor, and the water vapor is allowed to pass through the water-repellent particle layer and is liquefied in the liquefaction layer, thereby producing freshwater from the liquid. In the desalination system (2), a liquid layer height control section (106) and an introduction amount control section (1010) are also equipped, wherein the liquid layer height control section (106) determines the height of the liquid to be introduced into the water tank on the basis of information on the relationship between information corresponding to the introduction amount of the liquid introduced into the water tank and the height of the liquid level of the liquid in the water tank, and the introduction amount control section (1010) controls the introduction amount of the liquid to be introduced into the water tank on the basis of the above-determined height of the liquid level of the liquid.
