Claims:
CLAIMS

A packing device for a doner meat block comprising a turntable (80) at which a doner meat block (10) is being erected characterized in that a foil wrapper (30) arranged at a distance with the meat block (10) such that wrapping the meat block (10) with a stretch foil when the turntable (80) is being rotated in a rotational axis (y).

2. A packing device according to Claim 1 , wherein the foil wrapper (30) is moving along a path adapted to the outer shape of the meat block (10).

3. A packing device according to Claim 2, wherein a vertical guide (20) elevating the foil wrapper (30) is disposed next to the turntable (80).

4. A packing device according to Claim 3, wherein the foil wrapper (30) pivoted to the vertical guide (20).

5. A packing device according to any one of the preceding claims, wherein an intermediate pressing plate (70) is arranged between the turntable (80) and foil wrapper (30) and adapted to adjust foil to be wrapped to the meat block (10) in a predefined compression force.

A packing device according to any one of the preceding claims, wherein foil wrapper (30) is having an angle greater than 90° inclined comparing to the rotational axis (y) in a top position; an angle substantially 90° in a vertical moving position and an angle lower than 90° in a bottom position.

7. A packing device according to any one of the preceding claims, wherein a cutting device (80) is positioned at a vicinity of the turntable (80) configured so that cutting foil when the rotation of the turntable (80) is stopped.

8. A packing device according to any one of the preceding claims, wherein a pressing plate (70) is adapted to compress the meat block (10) from the top during the rotation of the turntable (80).

9. A packing device according to any one of the preceding claims, wherein the meat block (10) is aligned coaxial with the turntable (80) at the rotational axis (y).

10. A packing method for a packing device according to any one of the preceding claims, packing method comprising the steps of securing the meat block (10) on the turntable (80); connecting one end of a foil roll (40) attached to the foil wrapper (30) to the outer periphery of the meat block (10); the rotating turntable (80) and move the foil roll (40) vertically until the meat block (10) is completely wrapped.

11. A packing method according to claim 10, further comprising the steps of compressing the meat block (10) during the rotation of the turntable (80).

12. A doner product made by the production method according to the claims 10 o 1 1.

Description:
DEVICE AND METHOD FOR FOIL PACKING A DONER MEAT BLOCK

SPECIFICATION TECHNICAL FIELD

The present invention relates to packing devices for doner-like food products and a packing method thereof. PRIOR ART

In order to prepare a Turkish Doner Kebab usually vertical, dressed with Doner material of sliced meat or minced meat, is rotated on its vertical axis in front of a cooker and the broiled parts of the meat is manually cut by an operator using a knife in a vertically downward fashion.

A traditional doner meat block is in substantially frusto-conical shape with curved top and bottom edges. Inclination of lateral side facilitates cutting operation on the vertical meat block right after the broiling of the meat at a vicinity of the cooker.

Mass production of the meat blocks require shock-freezing the doner meat block for storage and distribution with unbroken cold chain. Due to the hygiene concerns, doner meat block is hermetically packed with a foil material, e.g. a shrinkable film after preparation and before put into the freezer. Commonly, meat block is manually packed with foil surrounding outer face of the overall block. When the meat block is in a vertical position, an operator start from a starting point at the lateral wall of the meat block and rotate the foil roller around the meat block a number of times until the meat block is completely surrounded by a windings made of foil to obtain a container. EP2183974 discloses a device comprises a resting station for receiving a spit and at least one foil winder for receiving a film roll with ribbon-like coiled-sheet and the unwinding of the film and that the film winder at a predetermined distance from the meat block in essentially linearly movable parallel to the spear shaft. According to the invention the film can be applied with a plurality of windings on the surface of the spit. The foil wrapped from the bottom up, i.e. from small scale to larger circumference. The initial windings on the spit surface in the form of a container, in which the meat block is received. This allows a more favorable force distribution on the film as reached in the reverse winding, from the side having the larger extent.

BRIEF DESCRIPTION OF THE INVENTION

The object of the present invention is to fast foil wrapping a doner meat block resistant to the super freezing conditions.

In order to realize the abovementioned object, invention is a packing device for a doner meat block comprising a turntable at which a doner meat block is being erected. In a preferred embodiment, foil wrapper is arranged at a distance with the meat block such that wrapping the meat block with a stretch foil when the turntable is being rotated in a rotational axis. Rotation of the meat block on the turntable facilitates wrapping of the meat block. Doner meat block is traditionally in frusto-conical shape. Doner meat blocks are erected from the circular sides. Meat blocks are made of minced meat or layers of sliced meats.

The foil wrapper is moving along a path adapted to the outer shape of the meat block. Rotational movement of the meat block and foil wrapper movement along the outer shape in combination will provide complete wrapping of the meat block and therefore forming a container.

A vertical guide is elevating the foil wrapper and disposed next to the turntable. Vertical guide provides movement of the foil wrapper in the up and down directions. Stoke of the foil wrapper is greater than the height of the meat block. The foil wrapper is pivoted to the vertical guide so that rotational movement of the foil wrapper on the vertical guide will be possible. In such a way, relative movement of the foil wrapper will provide wrapping in two axis to follow outer shape of the meat block.

An intermediate pressing plate is arranged between the turntable and foil wrapper and adapted to adjust foil to be wrapped to the meat block in a predefined compression force. Particularly, air in the meat blocks made of layers of meat slices will be evacuated from the gaps between the meat slices by means of the compression force. Foil will squeeze the relevant part in meat block and seal the gaps by wrapping. Compression force on the meat block provide from either stretched wrapping or pressure with any plate will create a vacuum during the packaging process. Vacuum effect provided by such a packaging device will also extend expiring date of the meat block. Foil wrapper is having an angle greater than 90° inclined comparing to the rotational axis in a top position; an angle substantially 90° in a vertical moving position and an angle lower than 90° in a bottom position. Foil wrapper will access to the top, lateral side and bottom of the meat block in frusto-conical form in three corresponding positions. Rotation of the foil wrapper comparing to the meat block will provide foil to follow complete outer geometry so that meat block will be contained by the foil.

A cutting device is positioned at a vicinity of the turntable is configured so that cutting the foil when the rotation of the turntable is stopped. Then an operator will be able to remove the doner meat block from the packing machine. Completely packed meat block subsequently put into the super freezing chamber (-40°).

A pressing plate is adapted to compress the meat block from the top during the rotation of the turntable. Addition to the stretch foil pretension, pressing from the top will also help to remove more air from the meat block during the packaging process.

The meat block is aligned coaxially with the turntable at the rotational axis (y). Coaxial rotation of the meat block will provide an equal distance from each side of the meat block with the foil wrapper. In this way, meat block will be easily balanced against force arising from the wrapping movement.

In order to achieve above objectives, invention is also a packing method for a packing device as explained above. Preferred application comprises the steps of securing the meat block on the turntable; connecting one end of a foil roll attached to the foil wrapper to the outer periphery of the meat block; rotating the turntable and move the foil roll horizontally until the meat block is completely wrapped.

An additional application comprises compressing the meat block during the rotation of the turntable. Invention is also a doner product made by the production method accordingly.

BRIEF DESCRIPTION OF THE FIGURES

Figure 1 is the perspective view of a representative embodiment of subject matter doner meat block packing machine with a meat block is adapted for packing.

Figure 2 is a compression arm assembly adapted to the packing machine as shown in Fig. 1. Figure 3 disassembled compression arm as shown in Fig. 2

Figure 4 is side view of a compression mechanism over the meat block and meat block over the turntable.

Figure 5 is cross-sectional view of the embodiment shown in Figure 4. Figure 6 is cross-sectional view of a foil wrapper according to the embodiment in Fig. 1. Figure 7 is side view of the foil wrapper in Figure 6.

Figure 8 is partial perspective view of the turntable where the meat block is mounted. Figure 9 is a perspective view of the bottom plate.

THE DETAILED DESCRIPTION OF THE INVENTION

In this detailed description, the subject matter improvement is explained with references to examples without forming any restrictive effect only in order to make the subject more understandable.

In Figure 1 , a doner meat block (10) packing device is shown wherein the meat block (10) is in place and ready for packing. Packing device is comprising a frame (50) providing a structure to easily load and remove doner meat block which is around 60-80 cm and 100 kg weight. Meat block (10) is in frusto-conical form prepared as traditional way of putting slices of irregular shaped meat in a row.

A central hole (15) is extending vertically inside the meat block (10) between a top side (13) and a bottom side (18). A turntable (80) is secured on a packing station (55) inside the frame (50). A bottom plate (90) is removably secured on the turntable (80) on which the bottom side (18) of the meat block (10) is rested. Frame (50) defines an operating platform (52) next to the packing station (55).

A vertical guide (20) having shape of tower is erected at the operating platform (52) at a distance with the turntable (80). Vertical guide (20) provide linear movement for the foil wrapper (30) between operating platform to the height of the meat block (10). Vertical guide (20) comprises a bearing plate (32) guided inside a linear housing (22) surrounded by a casing (24). A foil wrapper (30) is pivoted on the bearing plate (32) by means of a first pivoting element (34). The foil wrapper (30) is rotatable in depth axis (z) and adapt itself to the corresponding outer profile of the meat block (10). A nut (32) fastens foil wrapper (30) to the bearing plate (32). The foil wrapper (30) is rotatable 0 to 45°, preferably 35° in two directions to the vertical axis (y) passing through the hole (15) of the meat block (10). Vertical guide (20) has a flange (26) formed at the bottom end to secure vertical guide (20) to the operating platform (52).

The foil wrapper (30) is loaded with a foil roll (40) attached to a U shaped foil holder (35). The foil roll (35) is directly facing towards the meat block (12). A tab (33) connects the foil holder (30) to the first pivoting element (34).

A tension arm (60) is fixed on the packing station (55) from its one end and extends between the turntable (80) and the vertical guide (20). A pressing plate (70) is also secured at the packing station (55) at a vicinity of the meat block (10). Pressing plate (70) is in reverse L shape comprising a vertical linear actuator (76) and a horizontal holding arm (74) at the tip of the linear actuator (76). At the distal end of the horizontal holding arm (74) a plate (72) in flat disc shape is rotatably attached. In Figure 2, tension arm (60) is shown from a perspective view. Tension arm (60) comprises a vertical bar (66) pivoted from two ends with an upper pivot element (67) and a lower pivot element (68). A holding part (64) in the form of a bar parallel to the vertical bar (66) is holding both upper and lower pivot elements (67, 68). The holding part (64) having a slit (641) extending in the central section wherein two parallel axial slides (63) are passing through. A piston (61) is also passing throughout the slit (641). An adjustment wheel (65) is attached to one end of the upper pivot element (67), lower pivot element (68) and piston (61). A mounting plate (62) in V cross-section is disposed next to the holding part (64). Figure 3 shows the same tension arm (60) in disassembled position. A rib (621) is extending at the mounting plate (62) in transverse direction and providing a rigid structure. A pivot end (661) at the both ends of the vertical bar (66) is in a tab form having central opening to pivotally connect to a corresponding housing (671).

In order to adjust position and angle of the vertical bar (66) relative to the meat block (10) and operator can use adjustment wheels (65) and change linear position. Due to the different radius and size of the doner kebabs position adjustment of the vertical bar (66) is required. After loading the meat block (10), operator can provide a defined distance, e.g. 3 cm, between the largest radius of the meat block (10) and position of the vertical bar (66). Figure 4 shows both the turntable (80) and the neighboring pressing plate (70) from a side view. The turntable (80) comprises a base (86) on which the bottom plate (90) is attached. Turntable (80) comprises three spaced bushings, namely an upper ring (861), a second ring (862) and a roller bearing (864). A rod (865) is passing through the inner holes of the base (86) members. End portion of the rod (865) is fixed to the inner ring of the roller bearing (865). Therefore, rod (865) is rotating at the vertical axis (y) and actuated by a motor (not shown) to rotate turntable (80) with meat block (10). An upper sheet (19) made of polyethylene is manually put at the top side (13) of the meat block (10). Covering area of the upper sheet (19) is slightly larger than the area being pressed by the plate (72). The upper sheet (19) protect the area where foil wrapper (30) is unable to cover during the wrapping process. The upper sheet (19) can be made of aluminum foil or protective paper.

A spit (17) rests at the bottom side and partially extend inside the central hole (15). Spit (17) is removed before the meat block (10) is prepared to use on a doner cooker.

Figure 6 shows the foil wrapper (30) in the embodiment of the Figure 1 from the AA cross- sectional view. The foil roll (40) is gripped between a lower roller element (38) and an upper roller element (39). The foil roll (40) is in cylinder shape and have a flat top and bottom edges (44, 46). As shown in Figure 7, one part of the lateral side (42) of the foil roll (40) is facing towards the foil holder (35). Lower and upper roller elements (38, 39) allow foil roll (40) to rotate in an axis vertical to the rotational axis of the pivoting element (34).

In order to pack the meat block (10), previously prepared the meat block (10) with spit (17) is put on the turntable (80) in a vertical position so that spit (17), rod (865) and center of the pressing plate (70) is coaxially aligned. Linear actuator (76) adjust the plate height according to the height of the meat block (10) by lowering the plate (72) over the top side (13) of the meat block (10). Plate (72) presses over the top side (13) to the meat block (10). Force on exerted by the plate is 0 to 50 kilograms. This way, air inside the meat block (10) is partially exhausted by the plate (72) pressure.

A piece of the foil roll (40) is grasped and released by the operator and loaded over the tension arm (60) to the lateral side (16) of the meat block (10). Tension arm (60) stretch the foil over the meat block (10) to ensure predefined pressure to be applied on the wrapped meat block (10) surface to compress meat block (10). Foil wrapper (30) move up and down over the vertical guide (20) to apply foil roll (40) to the lateral side (16) of the meat block (10). Normally, foil wrapper (30) is parallel to the vertical axis (y) to cover lateral side (16) of the meat block (10). When the foil wrapper (30) approach to the top end defined on the vertical guide (20) correspond to the top edge (12), foil wrapper (30) rotates 35° clockwise to cover upper edge (12) area of the meat block (10). When the foil wrapper (30) approach to the bottom end defined on the vertical guide (20) correspond to the bottom edge (14), foil wrapper (30) rotates 35° counter-clockwise to cover bottom edge (14) area of the meat block (10). Foil wrapper may rotate between 0° to 45° according to the rotational axis. Rotation of the foil wrapper (30) ensure complete cover with and surrounding the meat block (10) by the foil roll (40). After packing is complete, turntable (80) stops and cutter (82) rotates to move between the foil wrapper (30) and tension arm (60) to cut the foil. Plate (72) is elevated by the linear actuator (76) and rotates from the hinge (77) to easy removal of the meat block (10) from packing station (55) by an operator. When the plate (72) is removed, a vacuum effect on completely wrapped meat block (10) will be provided.

Figure 8 shows bottom part of the packing device wherein the turntable (80) is loaded over the bottom plate (90) with the meat block (10). An exemplary embodiment of the bottom plate (90) is shown in Figure 9. The bottom plate (90) is in a disc shape. A rim (91) of the bottom plate (90) is slightly curved to fit to the bottom edge (14). Bottom side of the meat block (10) sit on a circular flat base (95) surrounded by the rim (91). A central hole (93) is cut out from the center of the flat base (95). A slit (94) extend radially outwardly from the central hole (93) and form an entrance section (96) at the rim (91). At the opposite direction to the entrance section (96) a handle (92) is provided so that easy removal of the bottom plate (90) would be possible. An operator push slide the bottom plate (90) through the slit (94) until the central hole (93) snap fit to the spit (17). Bottom plate (90) cover bottom side of the meat block (10) and form bottom part of the container made of upper sheet (19), foil wrapping at the lateral side (16) and the bottom plate (19). The bottom plate (19) can be easily removed from grasping and pulling the handle (92). REFERENCE NUMBERS
