Abstract:
Provided is a gelator which can gelate a wide variety of solvents including water and organic solvents through the self organization of molecules of the gelator, even when added in a small quantity, and which can disperse and gelate an additive insoluble in a solvent or can gelate an optically active molecule selectively. A dipeptide derivative represented by formula (1) is used as an active ingredient for the gelator. A-B-C (1) [In formula (1), A and C independently represent a group represented by formula (2) or a hydrogen atom, wherein A and/or C is the group represented by formula (2); and B represents a hydrocarbon group which has 6 to 20 carbon atoms and may have one unsaturated bond.] [In formula (2), D represents a hydrogen atom, a methyl group or a metal atom; n represents 1 or 2; and R represents a phenylmethyl group, an i-butyl group or a sec-butyl group.]
