Abstract:
A donkey-derived characteristic peptide for identifying donkey-hide gelatin and products thereof, the peptide fragment comprising a first peptide fragment: HGNRGEPGPVGSVGPVGAVGPRGPSGPQGVRGDK and/or a second peptide fragment: GPTGEPGK. Two donkey-derived characteristic peptide fragments are screened out and obtained by means of a large number of experiments. The two peptide fragments have high specificity, and may be used to identify donkey hide, donkey-hide gelatin and donkey-hide gelatin products. Also provided is a method for identifying donkey-hide gelatin and products thereof, wherein optimal chromatographic conditions and mass spectrometry conditions are screened out by means of a large number of experiments. The entire method is simple to operate and has high accuracy, is beneficial to the quality control of donkey-hide gelatin, and may greatly enhance the efficiency and accuracy of detecting donkey-hide gelatin and products thereof, and is of great significance to ensuring the quality of donkey-hide gelatin and products thereof.
