The invention relates to a dough-processing system (100) for processing a U-shaped dough strand (1) with a processing head (2), which comprises two gripper means (4, 5) for winding the dough strand (1), and a shaping table (3) which is provided with positioning means for positioning the dough strand (1), the shaping table being designed as a processing table (3) in that various positioning means (26, 28, 33, 39, 39b, 40) of the processing table (3) have a plurality of different processing functions.
