A drying process and a drying device for a dish-washing machine, and the dish-washing machine. The drying process for the dish-washing machine comprises the following steps: (1) condensing wet air in the dish-washing machine, and collecting condensed water; (2) measuring a liquid level height H1 of the obtained condensed water; (3) measuring a liquid level height H2 of the obtained condensed water after a preset time period S1; (4) comparing a difference value of H2-H1 and a preset height X1: if the difference value is greater than X1, returning to step (2); if the difference value is not greater than X1, stopping condensing, and finishing the drying process. The preset height X1 is a height at which the condensed water is collected in the preset time period S1. The operating degree of the drying process can be regulated by controlling the preset height and the preset time period; the dish-washing machine can be set for different drying articles, so as to ensure that articles that are difficult to be dried can be dried thoroughly.
