Abstract:
A continuous oven (10) for heating a food product (26) having an outer surface and an interior includes an enclosure with a first heating zone (14a) and a second heating zone (14b). A conveyor (18) is configured to convey the product (26) from the first heating zone (14a) to the second heating zone (14b). At least one surface-browning infrared emitter (20a-20f) is adjacent the first heating zone (14a) and is configured to provide a first electromagnetic radiation profile to the product (26) to produce a crust matrix on the outer surface of the product (26). At least one interior-heating infrared emitter (22a-22d) is adjacent the second heating zone (14b) and is configured to provide a second electromagnetic radiation profile to the product (26) that is different from the first electromagnetic radiation profile.
