Claims:- 1. An edible composition comprising an oil component in an amount up to 10% by weight, an aqueous component in an amount up to 98% by weight, a non-stick agent in an amount up to 15% by weight, and a thickening agent in an amount 0.01 % to 15%. 2. An edible composition as claimed in claim 1 , in which the composition is sprayable at temperatures of between 1 °C and 50°C.

3. An edible composition as claimed in any preceding claim, in which the composition is sprayable at temperatures between 10°C and 40°C.

4. An edible composition as claimed in any preceding claim, in which the composition has a viscosity of between 20 and 1350 centipoise at 20°C.

5. An edible composition as claimed in any preceding claim, in which the composition has a viscosity of between 70 and 500 centipoise at 20°C.

6. An edible composition as claimed in any preceding claim, in which the composition has a viscosity of between 300 and 400 centipoise at 20°C. 7. An edible composition as claimed in any preceding claim, in which the composition comprises between 0.01 % and 5% of thickening agent.

8. An edible composition as claimed in any preceding claim, in which the composition comprises between 0.01 % and 2% of thickening agent.

9. An edible composition as claimed in any preceding claim, in which the composition comprises between 0.03% and 2% of thickening agent.

10. An edible composition as claimed in any preceding claim, in which the composition comprises between 0.03% and 0.5% of thickening agent. 11. An edible composition as claimed in any preceding claim, in which the thickening agent comprises a hydrocolloid.

12. An edible composition as claimed in any preceding claim, in which the thickening agent comprises xanthan gum.

13. An edible composition as claimed in any preceding claim, in which the thickening agent comprises one or more of alginate (alginic acid), sodium alginate, potassium alginate, ammonium alginate, calcium alginate, alginate ester, agar, carrageenan, processed eucheuma seaweed, locust bean (carob) gum, guar gum, tragacanth, acacia gum, starch, modified starch, tara gum, gellan gum, gelatanised and solubilised starch, cellulose gum, modified cellulose gum, methylcellulose gum.

14. An edible composition as claimed in any preceding claim, in which the thickening agent has emulsifying properties.

15. An edible composition as claimed in any preceding claim, in which the thickening agent has stabilising properties. 16. An edible composition as claimed in any preceding claim, in which the composition comprises a generally homogenous emulsion.

17. An edible composition as claimed in any preceding claim, in which the non-stick agent is an emulsifier.

18. An edible composition as claimed in any preceding claim, in which the composition is sprayable using a hand-held spray device.

19. An edible composition as claimed in any preceding claim, in which the oil component comprises between 0.1 % and 10% by weight of the composition.

20. An edible composition as claimed in any preceding claim, in which the oil component comprises between 3% and 6% by weight of the composition.

21. An edible composition as claimed in any preceding claim, in which the oil component comprises one or more of vegetable oil, olive oil, extra virgin olive oil, virgin olive oil, refined olive oil, rapeseed oil, sunflower oil, soya bean oil, canola oil, cottonseed oil, corn oil, ground nut oil, grape seed oil, butter oil, fractionated oil such as medium chain triglycerides, partially hydrogenated oils, refined fractions of mineral oil or any other plant derived oil.

22. An edible composition as claimed in any preceding claim, in which the aqueous component comprises between 65% and 98% by weight of the composition. 23. An edible composition as claimed in any preceding claim, in which the aqueous component comprises between 80% and 90% by weight of the composition.

24. An edible composition as claimed in any preceding claim, in which the aqueous component is water.

25. An edible composition as claimed in any of claims 1 to 23, in which the aqueous component comprises between 50% and 99% water.

26. An edible composition as claimed in any of claims 1 to 23 and 25, in which the aqueous component comprises between 80% and 99% water.

27. An edible composition as claimed in any preceding claim, in which the non-stick agent comprises between 1 % and 15% by weight of the composition.

28 An edible composition as claimed in any preceding claim, in which the non-stick agent comprises between 2% and 5% by weight of the composition.

29. An edible composition as claimed in any preceding claim, in which the non-stick agent comprises one or more of lecithin, chemical modification or derivative of lecithin, lecithin compound and physical modification or derivative of lecithin.

30. An edible composition as claimed in any preceding claim, in which the non-stick agent comprises one or more of liquid lecithin, de-oiled, powdered lecithin.

31 . An edible composition as claimed in any preceding claim, in which the composition comprises an emulsifier present in an amount between 1 % and 15% by weight of the composition.

32. An edible composition as claimed in claim 31 , in which the emulsifier is present in an amount 2% to 5% by weight of the composition. 33. An edible composition as claimed in claim 31 or claim 32, in which the emulsifier comprises one or more of lecithin, sugar ester, monoglyceride, diglyceride, chemical derivation of lecithin, lecithin compound and physical modification or derivative of lecithin. 34. An edible composition as claimed in any preceding claim, in which the composition comprises one or more of a salt component, common or culinary salt, sodium chloride, potassium chloride, flavouring, preservative, colouring, antioxidant, stabiliser, thickener, spice extract, alcohol, acidity regulator, seasoning, herb extract, chelating agent, EDTA. 35. An edible composition as claimed in any preceding claim, in which the composition comprises alcohol in an amount up to 20% by weight.

36. An edible composition as claimed in any preceding claim in which the composition comprises alcohol in an amount up to 5% by weight.

37. An edible composition as claimed in any preceding claim, in which the composition is subjected to one or more of irradiation, aseptic filling, pasteurisation, sterilisation, preservation by alcohol, sulphur dioxide or its compounds, chemical preservative such as benzoic acid, sorbic acid (or other salts), potassium sorbate, acidic preservation (lactic acid, citric acid, phosphoric acid, acetic acid, vinegar).

38. A method of dispensing sprayable edible composition as claimed in any of claims 1 to 37, the method comprising spraying a predetermined amount of composition with a known calorific content.

39. A dispenser containing a bulk supply of sprayable edible composition as claimed in any of claims 1 to 37, the dispenser being arranged to spray upon actuation, a predetermined amount of composition with a known calorific content.

Description:
EDIBLE COMPOSITIONS

The present invention relates to edible compositions, particularly but not exclusively to sprayable non-stick cooking compositions.

According to the present invention, there is provided an edible composition comprising an oil component in an amount up to 10% by weight, an aqueous component in an amount up to 98% by weight, a non-stick agent in an amount up to 15% by weight, and a thickening agent in an amount 0.01% to 15%.

In the present specification the percentages referred to are the percentages by weight of the total composition, unless specifically stated otherwise.

Preferably the composition is sprayable and is preferably sprayable at temperatures of between 1 °C and 50°C, and desirably 10°C and 40°C. Preferably the composition is sprayable at normal household or kitchen room temperatures. The above temperature ranges are considered typical household or kitchen room temperatures, but it will be appreciated that in certain environments the temperatures may be slightly above or below these ranges. The composition has a viscosity of between 20 and 1350 centipoise at 20°C and may have a viscosity of between 70 and 500 centipoise at 20°C. The composition may have a viscosity of between 300 and 400 centipoise at 20°C.

The composition may comprise between 0.01 % and 5%, 0.01 % and 2%, or 0.03% and 2% of thickening agent, and preferably between 0.03% and 0.5% by weight of thickening agent. The thickening agent may comprise a hydrocolloid, and may comprise xanthan gum. Alternatively or in addition the thickening agent may comprise one or more of alginate (alginic acid), sodium alginate, potassium alginate, ammonium alginate, calcium alginate, alginate ester, agar, carrageenan, processed eucheuma seaweed, locust bean (carob) gum, guar gum, tragacanth, acacia gum, starch, modified starch, tara gum, gellan gum, gelatinised and solubilised starch, cellulose gum, modified cellulose gum, methylcellulose gum or any other suitable hydrocolloid.

The thickening agent may have stabilising and/or emulsifying properties.

Preferably the composition comprises a generally homogenous emulsion and in which the non-stick agent may act as an emulsifier.

Preferably the composition is sprayable using a hand-held spray device, such as a mechanical, finger actuated spray pump dispenser, aerosol spray dispenser, dispensers using compressed or liquefied gas as propellant, trigger actuated pump dispenser and/or hydrostatic and/or mechanical spray apparatus.

Preferably the oil component comprises between 0.1 % and 10% by weight of the composition and most preferably between 3% and 6% by weight.

The oil component may comprise any liquid edible oil, including one or more of vegetable oil, olive oil, extra virgin olive oil, virgin olive oil, refined olive oil, rapeseed oil, sunflower oil, soya bean oil, canola oil, cottonseed oil, corn oil, ground nut oil, grape seed oil, butter oil, fractionated oil such as medium chain triglycerides, partially hydrogenated oils, refined fractions of mineral oil or any other plant derived oil. The oil component may include all oils present in the composition, such as any oil in the non-stick agent. Preferably the aqueous component comprises between 65% and 98% by weight of the composition and desirably between 80% and 90% by weight. The aqueous component may be water or may comprise between 50% and 99% water, and may comprise between 80% and 99% water. The aqueous component may contain water soluble or generally water soluble ingredients.

The non-stick agent preferably comprises between 1 % and 15% by weight of the composition, and desirably between 2% and 5% by weight. The non-stick agent may comprise one or more of lecithin, chemical modification or derivative of lecithin, lecithin compound and physical modification or derivative of lecithin. The non-stick agent may comprise one or more of liquid lecithin, de-oiled, powdered lecithin, or other forms and derivatives of lecithin or other edible non-stick agent(s), either alone or in combination.

The composition may comprise an emulsifier present in an amount between 1 % and 15% by weight of the composition and desirably in an amount 2% to 5% by weight of the composition. The emulsifier may comprise a single type of emulsifier or may comprise a combination of one or more different emulsifiers. The emulsifier may comprise a sugar ester, such as sucrose ester or derivatives thereof, mono and/or diglycerides, or any other suitable emulsifier. The emulsifier may comprise one or more of lecithin, chemical derivation of lecithin, lecithin compound and physical modification or derivative of lecithin. The non-stick agent may comprise the emulsifier and/or the thickening agent may comprise the emulsifier. The composition may comprise further components, such as a salt component, which may be common or culinary salt comprising wholly or substantially wholly of one or more of sodium chloride and potassium chloride, flavourings, preservatives (such as but not only sulphur dioxide and/or its components), colourings, antioxidants (such as Vitamin C and its components, tocopherols, gallates, BHA, BHT, BHQ), stabilisers, thickeners, spice extracts, alcohol, acidity regulator, seasonings, aromatics, herb extracts, chelating agent (such as EDTA and/or compounds, salts or derivatives of EDTA). Alcohol may be used as a preservative and in amounts up to about 20% and preferably up to about 5% by weight of the composition. The alcohol or alcohols may be substantially comprised in the aqueous component. The composition may be subjected to preservative treatment such as by one or more of irradiation, aseptic filling, pasteurisation, sterilisation, preservation by alcohol, sulphur dioxide or its compounds, chemical preservative such as benzoic acid, sorbic acid (or other salts), potassium sorbate, acidic preservation (lactic acid, citric acid, phosphoric acid, acetic acid, vinegar), and any other suitable method.

According to a further aspect of the present invention, there is provided a method of dispensing a sprayable edible composition as described in any of paragraphs two to sixteen above, the method comprising spraying a predetermined amount of composition with a known calorific content.

According to a still further aspect of the present invention, there is provided a dispenser containing a bulk supply of sprayable edible composition as described in any of paragraphs two to sixteen above, the dispenser being arranged to spray upon actuation, a predetermined amount of composition with a known calorific content.

Embodiments of the present invention will now be described by way of example only.

There are provided edible compositions comprising an oil component in an amount up to 10% by weight of the composition, an aqueous component present in an amount up to 98% by weight of the composition, a non-stick agent present in an amount up to 15% by weight of the composition and a thickening agent present in an amount 0.01 % to 15% by weight of the composition. In preferred embodiments of the invention, the edible composition comprises a non-stick cooking composition that can be applied to cooking implements, utensils, vessels and/or food itself before and/or during the cooking of the food, principally to help prevent sticking of the food to the cooking vessels, etc, to itself and generally.

However, it will be appreciated that the edible compositions of the present invention can be used in a way that does not directly exploit any non-stick cooking qualities that it has, such as use as a flavouring spray for foodstuffs or otherwise to introduce and/or enhance the flavour of foodstuffs in general or to generally improve their palatability. In such embodiments the compositions of the present invention may be described as flavouring or food compositions. It will be still further appreciated that the compositions could have a dual function of a non-stick cooking and seasoning/flavouring/ palatability enhancing composition.

The compositions are sprayable at normal or typical household or kitchen room temperatures. Such temperatures typically range from 1°C to 50°C and often more specifically 10°C to 40°C. However, it will be appreciated that in certain environments such temperatures can be slightly lower or higher than these ranges.

In more detail, the preferred compositions comprise a generally homogenous mix of the various components. The compositions of the present invention are generally relatively stable emulsions over the expected shelf life (typically 6 to 12 months), although in some cases mixing before use, such as by shaking or otherwise agitating the container, can help to maintain a homogenous mix and thus facilitate dispensing of consistent amounts and content of the composition, as will be explained.

The oil component comprises up to 10% by weight of the composition, but in certain embodiments comprises 0.1% to 10% by weight of the composition and in preferred embodiments between 3% and 6% by weight. The oil component can be any liquid edible oil, including one or more of a vegetable oil, olive oil, virgin olive oil, extra virgin olive oil, refined olive oil, rapeseed oil, sunflower oil, soya bean oil, canola oil, cottonseed oil, corn oil, ground nut oil, grape seed oil, butter oil, fractionated oil such as medium chain triglycerides, partially hydrogenated oils, refined fractions of mineral oils or any other plant derived oil. In certain embodiments relatively small amounts of harder fats such as but not only hydrogenated oils and fats, one or more of butter fat, palm oil, coconut can be comprised in the oil component. Such harder or waxy fats are solubilised by dissolving them in relatively larger amounts of oils that are liquid at the typical temperature at which the composition will be used (room temperature).

It has been found that compositions comprising between 3% and 6% by weight of such oils provide a sufficient level of oil within the compositions, particularly when used as a cooking composition to provide appropriate cooking characteristics, whilst providing a sufficiently low oil content to provide the composition with a relatively low calorie content compared to pure oils and fats and other cooking compositions typically used in cooking using techniques such as frying, roasting, stir-frying.

In preferred embodiments, the oil component includes all oils present in the composition, including any oil in the non-stick agent. The aqueous component is present in an amount up to 98% by weight of the composition, but particular embodiments have an aqueous component content of between 65% and 98%. Preferred embodiments comprise an aqueous component with between 80% and 90% as these levels of aqueous component particularly when mixed with between 3% and 6% oil component and the non-stick agent and thickening agent provide a relatively low calorie, generally stable emulsion that exhibits good cooking characteristics such as reasonably good stir frying, shallow frying and roasting characteristics. In its simplest form, the aqueous component is water, although the aqueous component could comprise water combined with other components, which would typically be water soluble, in which case the aqueous component would comprise between 80% and 99% by weight of water, and can comprise between 50% and 99% water in certain embodiments

Generally, the water soluble and substantially water soluble ingredients in the composition, such as the thickening agent, any alcohol, any potassium sorbate and other preservatives, water soluble flavours, seasonings, antioxidants, are present in the aqueous phase.

The non-stick agent is present in amounts up to 15%, but in preferred embodiments between 2% and 15% by weight of the composition. Particular embodiments provide a non-stick agent in amounts 2% to 5% by weight of the composition.

In certain embodiments the non-stick agent comprises one or more of lecithin, lecithin compound, physical derivative or modification of lecithin or chemical modification or derivative of lecithin. Compositions within the scope of the present invention can comprise one or more of liquid lecithin, de-oiled, powdered lecithin, or other modified forms or derivatives of lecithin. The lecithin can be derived from one or more of plant matter, oil seeds, eggs and/or animal matter. Alternative non-stick agents can be used instead of or alongside the aforesaid agent, as may be permitted by local laws and regulations governing the use of such products in a given jurisdiction. These various forms could be used individually, or in combination.

The thickening agent is present in an amount 0.01 % to 15%, in certain embodiments in an amount between 0.01 % and 5%, in others between 0.01 % and 2% and in others between 0.03% and 2% and in certain embodiments between 0.03% and 0.5% by weight of the total composition. These weights are typically of the agent when in a dry, powder form, before being dissolved into the composition.

In preferred embodiments the thickening agent is xanthan gum. In alternative embodiments the thickening agent comprises one or more of xanthan gum, alginate (alginic acid), sodium alginate, potassium alginate, calcium alginate, ammonium alginate, alginate ester, agar, carrageenan, processed eucheuma seaweed, locust bean (carob) gum, guar gum, tragacanth, acacia gum, starch, modified starch, pregelatinised starch, tara gum, gellan gum, gelatinised and solubilised starch, cellulose gum, modified cellulose gum, methylcellulose gum, or other suitable hydrocolloid.

The thickening agent is an important ingredient in the compositions of the present invention. Without the thickening agent the viscosity of the composition is found to be too low to enable satisfactory spraying, particularly using hand-held, finger actuated mechanical, low pressure spray devices. Typically the viscosity of the compositions absent the thickening agent are less than 20 centipoise. Providing thickening agent in the compositions of the present invention increases the viscosity to within the broad range 20 to 1350 centipoise, and more specifically to within the ranges 70 to 500 centipoise and in alternative embodiments within the ranges 300 to 400 centipoise (all at 20°C), enabling the compositions to be sprayed with generally uniform, consistent spray patterns with little or no spitting or spluttering. Providing compositions with the viscosities engineered in accordance with the present invention enables them to be sprayed using hand-held, finger actuated mechanical spray dispensers that operate at relatively low pressures, not requiring propellant gases such as LPG that are often considered detrimental to the general environment and present potentially hazardous highly flammable characteristics. For the avoidance of doubt, all pressure sensitive measurements are taken at average atmospheric pressure conditions at sea level (Bar 1 ).

The choice of thickening agent is preferably such that as well as acting to increase and control the viscosity of the composition, it acts to stabilise and emulsify the composition. The thickener of choice is typically hydrocolloidal, and can be a hydrocolloid such as a gum. Xanthan gum is particularly effective at acting as thickener, stabiliser and emulsifier, although some or all of the other possible thickening agents listed above also exhibit such advantageous properties.

The thickening agent also provides the added advantage of stabilising the emulsions of the compositions. It has been found that the relatively low levels of oil component compared to aqueous component tend to result in an unacceptable level of separation, resulting in a poor shelf life. The presence of the thickening agent, particularly the xanthan gum, has been shown to stabilise the emulsions and to improve the shelf life of the compositions of the present invention. Compositions comprising between 3% and 6% oil, 80% and 90% water, 2% and 10% soya lecithin, preferably in de-oiled, powdered form and 0.05% to 2% thickening agent, provide particularly favourable embodiments exhibiting combined characteristics of good cooking characteristics, relatively low calorific content per unit weight/volume of composition, good stability and good sprayability characteristics.

In certain embodiments the composition comprises an additional emulsifier, present in amounts between 1 % and 15% by weight of the composition. Certain embodiments comprise emulsifier present in amounts between 2% and 5% by weight of the composition. The emulsifier can be a single type of emulsifier or a combination of one or more different emulsifiers. The emulsifier can comprise one or more of sugar ester, sucrose ester, mono and diglycerides, polysorbates, xanthan gum, carrageenan gum, alginates, cellulose gums, methyl cellulose, agar, other hydrocolloids, or functionally equivalent derivatives thereof. The emulsifier can comprise one or more of lecithin and/or derivatives of lecithin. In certain compositions the non-stick agent may provide a dual function of non-stick agent and emulsifier (such as lecithin and lecithin derived compounds). Further emulsifier(s) may be used to complement the emulsifying properties of the non-stick agent.

In certain embodiments the composition comprises other additives such as a salt component (which may comprise common or culinary salt comprised wholly or substantially wholly of one or more of sodium chloride and potassium chloride and/or salt substitutes), flavourings (natural, artificial and/or nature identical), preservatives (such as but not only sulphur dioxide and/or its components), colourants, antioxidants (such as but not only Vitamin C and its compounds, tocopherols, gallates, BHA, BHT, BHQ), stabilisers, thickeners, spice extracts, acidity regulators such as lactic acid, alcohol (typically ethyl alcohol and/or isopropanol - up to 20% and preferably about 5% by weight of the composition), seasonings, aromatics, herb extracts, pH buffers. One or more chelating agents can also be provided such as (but not only) EDTA and/or compounds, salts or derivatives of EDTA. One or more of these may be provided in the oil component and/or the aqueous component, generally according to whether they are mainly water soluble or oil soluble and/or additional to these as separate components. It will be appreciated that any suitable additives can be added, provided their presence is allowable under prevailing food products legislation in the territory concerned.

The colourant or colourants added to the composition are selected according to the desired overall colour of the composition. The appearance of the compositions can be important to the consumer and can enhance the attractiveness. For example, colourants can be added to give the composition an overall yellowish colouration to resemble the yellowish colouration of natural seed oils such as sunflower oil, or to give the composition an overall yellow-green colour to resemble the typical colouration of certain extra virgin olive oils, or to give the composition a colouration that represents to the average consumer that the composition has a particular flavour or ingredient, eg a reddish colouration to suggest the composition comprises chilli pepper, paprika and suchlike. The colourant(s) can simply be added to reinforce or emphasise the natural colour of the composition, which can generally fade with time. The colourant(s) can be natural, artificial or nature identical. The colourant(s) can include naturally coloured substances that are not typically classified as food colourants, such as spices (turmeric, paprika), spice extracts, vitamin, provitamins (B vitamins, luteines, carotenes, carotenoids).

The composition would normally be subjected to preservative treatment such as irradiation, aseptic filling, pasteurisation, sterilisation, preservation by alcohol, sulphur dioxide or its compounds, chemical preservative such as benzoic acid, sorbic acid (or other salts), potassium sorbate, acidic preservation (lactic acid, citric acid, phosphoric acid, acetic acid, vinegar), or any other suitable method.

Example 1

In one particular example of the present invention, the composition comprises 86.8% water, 6% vegetable oil, 3% alcohol (96%) (as preservative), 0.2% xanthan gum and 4% soya lecithin. The composition has an overall calorific content of 109kcals calories per 100 ml and a viscosity of 350 centipoise at 20°C.

The invention also provides a method of dispensing sprayable food compositions of the present invention, the method comprising spraying a predetermined amount of composition with a known calorific content. In a preferred example, 0.2 ml of the composition is sprayed using a spray dispenser such as a finger operated, metering spray canister, such that each actuation of the dispenser sprays an amount of composition comprising approximately 0.2 kcals.

In use, particularly as a non-stick cooking composition, the composition can be sprayed directly onto the cooking surface, such as the inside of a frying pan or griddle, and/or onto the cooking utensils and/or the food itself. The composition has been shown to exhibit good non-stick characteristics, helping to prevent foodstuffs from sticking and providing sufficient oil to enable satisfactory stir frying, shallow frying or roasting of the food.

During use of the composition volatiles such as the alcohol will generally evaporate away upon exposure to temperatures of about 90°C or above (e.g. during cooking) reducing the overall calorific content of the composition when consumed.

Suitable dispensers include hand-held spray devices such as hand-operated mechanical, finger actuated spray pump dispensers, aerosol spray dispensers, spray dispensers utilising compressed or liquid gas as propellant and/or trigger, button (or similar) actuated pump dispensers. Hydrostatic and/or mechanical spray apparatus can also be used

As described above, the viscosities of the composition are engineered to within the aforesaid ranges, enabling the compositions to be sprayed using relatively low pressure mechanical spray pumps that do not require compressed, pressurised propellants such as LPG, to have consistent, generally uniform and regular spray patterns. The delivery of predetermined or premeasured amounts per actuation of the dispenser enables the user to dispense amounts of the composition with very low fat/oil and low calorific content. This can enable the user to control the amount of fat/oil and calorie intake and the amount of fat/oil and calories added to foodstuffs during cooking. This can help to maintain a reduced/low fat diet and where required help with weight control and slimming. Further, the use of oils generally considered of the healthier variety, such as non-hydrogenated vegetable oils in the compositions can be made, which may be considered to further enhance the healthiness of the compositions of the present invention

The invention further provides a dispenser containing a bulk supply of sprayable compositions of the present invention, the dispenser being arranged to spray upon actuation a predetermined amount of composition with a known calorific content.

The compositions of the present invention can also be dispensed in known approximate amounts using dispensing mechanisms that dispense a generally known amount over a period of time. For example, dispensing mechanisms that dispense a continuous spray of composition, such as a continuous aerosol dispenser, can be used to dispense generally known amounts of composition by calibrating the period of time over which composition is dispensed with the amount of composition dispensed per unit of time. For example, if approximately 2 ml of composition is dispensed during a 1 second spray, then the approximate amount of composition and thus the approximate calorific content thereof dispensed over a predetermined time can be calculated within practical accuracy.

Further specific examples of compositions according to the present invention are as follows. Example 2

In this example, the composition comprises 86.49% water, 4.8% alcohol (96%), 0.1 % potassium sorbate, 0.6% lactic acid, 2% lecithin, 5.9% sunflower oil, 0.1 % xanthan gum, 0.01 % antioxidant.

This composition has an overall calorific content of approximately 104 kcals per 100 ml, such that when dispensed in 0.2 ml portions, each portion comprises approximately 0.2 kcals.

During cooking, volatiles in the composition, such as the alcohol will generally evaporate upon exposure to heating reducing the overall calorific content to 73 kcals per 100ml, 0.15 kcals per 0.2ml dispersed The viscosity of the composition is approximately 72 centipoise at

20°C.

Example 3 In this example, the composition comprises 93.5% water, 2% soya bean oil, 0.1 % potassium sorbate, 3.85% lecithin, 0.5% thickening agent and 0.05% antioxidant.

This composition has an overall calorific content of approximately 53 kcal per 100 ml, such that when dispensed in 0.2 ml portions, each portion comprises approximately 0.1 kcals.

The thickening agent can comprise any one or more of the aforementioned thickening agents. Example 4

In this example, the composition comprises 74.9% water, 10% sunflower oil, 10% lecithin, 4,8% alcohol (96%), 0.1% potassium sorbate, 0.1 % xanthan gum and 0.1 % flavouring.

This composition has an overall calorific content of approximately 211 kcals per 100 ml, such that when dispensed in 0.2 ml portions, each portion comprises approximately 0.4 kcals.

The composition has a viscosity of approximately 70 centipoise at

20°C.

As indicated in relation to foregoing examples, during use of the compositions under heat conditions, eg during cooking, volatiles including the alcohol, may evaporate away (completely or in part), such that the calorific content of the compositions consumed may be significantly less than that before use. For the composition of Example 4, the approximate calorific content of the composition when the volatiles have evaporated off is about 179 kcal per 100 g (0.36 kcal per 0.2 ml dispensed amount).

In the specific examples given above alcohol (96%) is used (96% alcohol and 4% water). Other concentrations of alcohol can be used where appropriate. Further, specific examples refer to 0.2ml dispersed amounts. In embodiments where fixed dosage or metering spray pump dispensers are used (i.e. fixed amounts are dispensed upon each actuation of the dispenser) the amounts fixed can be quite accurate, but are generally considered approximate. The 0.2ml amounts are given as an example of an amount that has been found to be particularly useful, but other amounts could be dispensed in accordance with the invention. Whilst endeavouring in the foregoing specification to draw attention to those features of the invention believed to be of particular importance it should be understood that the applicant claims protection in respect of any patentable feature or combination of features hereinbefore referred to and/or shown in the drawings whether or not particular emphasis has been placed thereon.
