Abstract:
Provided is an edible vegetable oil and fat in which a sesame-oil aroma is enhanced. This edible vegetable oil and fat has a sesame-oil aroma and contains 2-methylpyrazine, dimethylpyrazine, 2-furanmethanol, furfural, and pyrazine, the 2-methylpyrazine content being 6 μg or greater within 100 mg of the edible vegetable oil and fat and moreover being greater than each of the dimethylpyrazine content and the 2-furanmethanol content, and the ratio of the dimethylpyrazine content to the 2-methylpyrazine content being 0.40-0.90.
