Abstract:

A hen’s egg being the same as usual ones except the intake of which causes no egg-allergy, and a method of producing the same. Namely, a hen’s egg characterized by containing a serine protease inhibitor in a reduced amount compared with natural eggs. This egg can be obtained by feeding poultry with activated water obtained by, for example, irradiation with infrared rays of 2.5 to 25 μm in wavelength followed by egg-laying.
