Abstract:
An electric field frying method using a receptacle for object to be treated as the electrode is disclosed The method includes the following steps putting the foodstuff to be treated through electric field frying into a receptacle (16) for said foodstuff in the state of to be surrounded substantially, and applying homopolar ac voltages onto said receptacle (16) to implement electric field frying, wherein the receptacle (16) is made of electrically conducting material An electric field fryer using a receptacle for object to be treated as the electrode is disclosed also.
