Abstract:
[PROBLEMS] To attain excellent emulsification and emulsion stability in diluting a composition consisting of vegetable oil and a surfactant with water even when the amount of the surfactant is small. [MEANS FOR SOLVING PROBLEMS] An emulsifier for vegetable oil which contains as the essential components a polyoxyalkylene sorbitol fatty acid ester represented by the general formula (I): (I) [wherein n is 2 or 3, or a mixture of both (in this case, the two kinds of units are arranged at random or in block); m1 to m6 are such integers as to give a sum total of 10 to 50; and R1 to R6 are each acyl or hydrogen], and an alkaline earth metal salt of a dialkyl- or dialkenyl- sulfosuccinic acid.
